Mulled Cider Pork Loin

 

Ingredients:                                                                 

2-3 lb pork loin, center cut

Olive oil

Onion powder

Garlic powder

Salt and pepper to taste

Jar of Plum Island Jams Mulled Cider with Cranberries

 

Instructions:

Put 2 Tbsp olive oil in a frying pan.  Add the pork loin and sprinkle all over with onion and garlic powder.  Lightly sprinkle with salt and pepper (optional).  Brown the pork loin in the frying pan turning to brown on all sides.  With a sharp knife score the top of the roast in a crisscross pattern.  Place the roast in rack in a roasting pan.  Add a little water to the bottom of the pan.  Roast the pork loin at 325° for 25-30 minutes per pound adding water to the pan if necessary.  Half way through the roasting time spread the jam over the roast and repeat the last 20 minutes of roasting. 

Roast is done when the internal temperature reads 170°F. 

Remove the roast from the pan and let it sit about 5 minutes before serving.  The remaining jam can be mixed with the pan juices to make a sauce to serve with the meat.
